THE MONASTERY

Since 1632, the monastery of Agia Triada of Tzagarolon in Akrotiri, Chania has been a place of prayer, work and hospitality. The land that sustained the brotherhood for generations still gives us olives and grapes, tended with the
patience of monastic life.

A TRADITION ROOTED IN THE OLIVE TREE AND VINE

Olive trees and vines have always shaped life here. We tend them the way the monks did: by the rhythm of the seasons, with little intervention and a lot of care. What reaches your table tastes of this place and nothing else.

Cultivation

We look after our 17 hectares of monastic vines year-round, working with the land and not against it.

Harvest

Picked at the right moment, by hand from local people who share the same passion for the wine.

Pressing

Pressed within a few days of harvest in the most gentle and experienced way in the traditional winery of the monastery to keep the aroma, color and freshness.

Storage

Depending the character of the wine, it is rested in cool wooden barrels or stainless steel tanks in the cellar of the monastery until it is ready for the bottle.

Bottling

Bottled in small batches, then sealed and labelled on site.
